  • 2/3 cup panko crumbs

  • 1 lemon for zest
  • 2 teaspoons olive oil
  • 3 tablespoons butter, melted
  • 1 tablespoon Dijon mustard
  • Kosher salt and freshly ground black pepper

For the White Wine Sauce:

  • 2 tablespoons butter
  • 1 tablespoon minced garlic 
  • 1 cup rose wine
  • 1 cup heavy cream
  • 1 teaspoon finely chopped chives
  • 1 teaspoon finely chopped cilantro 

Instructions:

  1. Preheat the air fryer to 350°f. Line a sheet tray that fits your air fryer basket with parchment paper.
  2. Combine Parmesan, panko, chives, and lemon zest in a mixing bowl. Stir in the olive oil. Set aside.
  3. Salt and pepper the fillets
  4. Combine melted butter, mustard, and minced garlic in a small bowl.
  5. Place the salmon on the prepared sheet tray and brush the top generously with garlic butter. 
  6. Press the tops and sides of the salmon into the panko Parmesan mixture. 
  7. Place the tray in the air fryer basket, spray salmon with oil cook for 10 minutes Or until golden brown on top.
  8. Add the wine, garlic, chives and cilantro, and butter o a medium saucepan over medium heat for the sauce. Bring to a simmer. reduce by three-fourths. 
  9. Once reduced, add the cream and reduce for 3 minutes, until the sauce slightly thickens.
  10. Serve with lemon and rose wine sauce.
