It’s fall, which means it is PUMPKIN SEASON. I absolutely love pumpkin so when my friend Nicole sent me this recipe to try, I was all for it.

The only thing missing from the original recipe was the addition of chocolate chips but after some experimenting, I added them in to make these delicious muffins even better! It’s also back-to-school time so if you’re looking for a sweet treat to send with your child to school, these are perfect!

They are even great to make with your coffee or tea on a chilly morning. I use this recipe as a base to make all sorts of pumpkin muffins! I hope you give them a try.

Have you ever made muffins in the air fryer oven? I love having an oven that I can cook muffins in. Makes my life so much easier. This recipe is great because it uses one bowl, no mixers needed, and you don’t even need to grease the pan!

I love baking in the regular over AND the air fryer oven. Honestly as long as it tastes good I’m down for pretty much any baked good. 🙂

What are the ingredients for these easy air fryer pumpkin muffins with cinnamon sugar topping?

· 1/2 cup Pumpkin puree

· 2 Eggs

· 2 cups All-purpose flour

· 1 tsp of Baking powder

· 2 tsp of Cinnamon, divided

· 1 cup of sugar, divided

· 1/2 cup of oil

· 1/4 cup of Butter

· 1/2 cup of Milk

These awesome muffins are so great and yummy for fall. These are perfect with coffee and tea. These are great to take to a party or just to have around the house!

For these air fryer pumpkin muffins you will need muffin tins. What I like about these is that you can control how much you want to make. You can make 4 or 12. If you are the only one eating them you might want to just make 4 at a time. You can grab these muffin tins here.

Easy Pumpkin Muffins With Cinnamon Sugar Topping

These air fryer pumpkin muffins are delicious and super easy to make for the perfect fall treat!

Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • · 1/2 cup Pumpkin puree
  • · 2 Eggs
  • · 2 cups All-purpose flour
  • · 1 tsp of Baking powder
  • · 2 tsp of Cinnamon, divided
  • · 1 cup of sugar, divided
  • · 1/2 cup of oil
  • · 1/4 cup of Butter
  • · 1/2 cup of Milk

Instructions

  1. In a mixing bowl, mix the oil, eggs, 1/2 cup of sugar, 1 teaspoon of cinnamon. Pumpkin, and milk. Once mixed, gradually add the flour until a batter is formed.
  2. Place oven safe silicone cupcake molds in air fryer basket and fill with batter. Cook on 300° for 12 minutes.
  3. Let cool.
  4. Mix the remaining cinnamon and sugar together and melt the butter.
  5. Brush cooled muffins with melted butter and dip in the cinnamon sugar mixture for a good coating.
  6. Enjoy
