  • 7 medium-sized russet potatoes 
  • 1 tablespoon olive oil 
  • 1/2 cup of chopped bacon
  • 1 cup of shredded cheese 
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dry dill
  • 1 teaspoon onion powder 
  • 1 teaspoon garlic powder
  • Chopped Green onions for garnish

  1. Using your hands, rub the potatoes under water to rinse off dirt and particles. 
  2. Coat the potatoes in the oil and place them in an air fryer basket. 
  3. Cook at 400° for 30 minutes. Make sure they are cooked by poking with a fork with no resistance.
  4. Cut the potatoes in half long ways and scoop out the insides forming a boat. Leave about a 1/4” of potato.
  5. Mix your spices, spray the potatoes with oil, and season.
  6. Sprinkle a good amount of cheese and bacon in each potato and season the top with the remaining spices. 
  7. Place back in the air fryer basket and cook at 350° for 10 minutes until cheese is melted and potato edges are crispy. Let rest in air fryer for 5 minutes.
  8. Remove and garnish. Serve with ranch as a dipping sauce.
