My favorite type of cookie are soft oatmeal cookies hands down. This homemade version of little debbie oatmeal creme pies are just perfect! I can remember buying them every single day at the bodega on the way to school.
What ingredients do you need for this air fryer oatmeal cookie recipe?
· 1 Egg
· 1 cup rolled oats
· 1/8 cup unsulfured molasses
· 1 cup, 2 tablespoons All-purpose flour, unbleached
· 1/2 tbsp baking powder
· 1/4 tsp baking soda
· 1/2 cup brown sugar, dark
· 1 tsp cinnamon, ground
· 1/4 cup sugar
· 1/4 tsp nutmeg
· 1/2 teaspoon vanilla extract
· 1/2 cup butter
Filling:
· 3 tablespoons of butter
· 1/3 cup of powdered sugar
· 1 teaspoon of vanilla
· 7 oz of marshmallow fluff
These molasses oatmeal cookies are so good! This is a childhood favorite of mine that i loved to re-create. It’s a great soft cookie with a delish marshmallow creme. It doesn’t take a long time to cook and this recipe will be one of those crowd pleasers! The first time you try these you won’t believe how good these delicious oatmeal cookies taste like little debbie’s oatmeal cream pies.
It’s a great treat to stick in lunch boxes or maybe you can serve with an ice cream scoop. The good thing about these is that they are great a little heated or at room temperature. It’s a great recipe for the holidays or anytime really.
Easy Air Fryer Homemade Oatmeal Creme Cookies
These amazing oatmeal cookie sandwiches are so good and reminiscent of Little Debbie's Oatmeal Creme Cookies!
Ingredients
- Ingredients:
- · 1 Egg
- · 1 cup rolled oats
- · 1/8 cup unsulfured molasses
- · 1 cup, 2 tablespoons All-purpose flour, unbleached
- · 1/2 tbsp baking powder
- · 1/4 tsp baking soda
- · 1/2 cup brown sugar, dark
- · 1 tsp cinnamon, ground
- · 1/4 cup sugar
- · 1/4 tsp nutmeg
- · 1/2 teaspoon vanilla extract
- · 1/2 cup butter
- Filling:
- · 3 tablespoons of butter
- · 1/3 cup of powdered sugar
- · 1 teaspoon of vanilla
- · 7 oz of marshmallow fluff
Instructions
- Process rolled oats in a food processor, pulsing 10 times to vary size of oats.
- In a mixing bowl, add oats, flour, baking soda, baking powder, cinnamon, sugar, and nutmeg. Mix thoroughly.
- In another mixing bowl add the sugar, brown sugar and butter. Mix until fluffy. Add the egg, then add the vanilla and molasses.
- Add the flour and oats mixture 1 cup at a time while mixing.
- Using a small cookie scoop, scoop batter and form into a ball. Place batter on sprayed foil in the air fryer basket. Cook on 350 for 8 minutes or until firm and cooked through.
- Set cookies aside to rest.
- In a mixing bowl, combine the butter and powdered sugar until creamy. Add the vanilla and marshmallow and mix for 5 minutes.
- Place a tablespoon of filling between two cooled cookies.
